The restaurant is on a mission to make the world a healthier place and has a robust menu that is incredibly vegan, vegetarian and gluten-free friendly. But fear not, meat-eaters! There’s plenty of dishes for you to savor, too. Even the biggest burger aficionado won’t be able to stop talking about the seasonal hatch green chile turkey burger–with smoked gouda, hatch chile ranch, roasted chile, organic arugula and tomato. If you’re of the mindset that turkey burgers are simply bland and boring alternatives to your usual American burger, please try this one–then think again.

We would also highly recommend sharing the edamame dumplings, loaded with dashi, white truffle oil and herbs for the table. We couldn’t conclusively make up our minds if this was better than the edamame guacamole, with avocado, cilantro, umami crackers and Chef Matt’s infamous “magical dust” (which is truly magical). So, dear reader, we’ll leave that to you to try and decide. 

What we can conclusively say is that the cocktails at True Food Kitchen are incredibly underrated. Even those who aren’t typically martini or cucumber fans won’t be able to get enough of the cucumber martini. 

One of the most remarkable things about True Food Kitchen is how its artisan chefs create both classic dishes and a steady rotation of seasonal offerings. The fall menu made its debut Oct. 1, bringing with it more than 40 new dishes. Notably, the bar has seasonal offerings, too. The Cowboy Jam cocktail is the equivalent of an adult Kool-Aid, with High West double rye, concord grape reduction and grapefruit, while Dazzling Eyes is a surprising blend of Don Q Rum, coconut, carrot juice and Thai basil.

True Food Kitchen has two locations in Las Vegas and 44 locations across the US. The Downtown Summerlin location is open Monday to Friday, 11 a.m. to 9 p.m., and Saturday and Sunday, 10 a.m. to 9 p.m. The Forum Shops at Caesars Palace location is open Monday to Friday, 11 a.m. to 9 p.m.; Saturday, 10 a.m. to 10 p.m.; and Sunday, 10 a.m. to 9 p.m.
